VINTAGE DESCRIPTION: A dry spring and warm dry summer generally reduced crop yields, setting the foundation for one of the lowest yielding per acre vintages seen in the Hunter. The weather during the harvest was warm with little interruption from rain allowing the vintage to progress smoothly. The lower yield produced some exceptional fruit and hence exceptional wines. Good density and regional characters were evident.

WINEMAKERS NOTES:

Appearance: Deep red plums.

Nose: Mints and berry.

Palate: Excellent depth of flavour with a bold minty presence and a nuance of delicate chocolate and cassis. Plums & berries plus loads of attractive spice & peppers. Palate is fresh with good balance and harmony.

85% Cabernet 13% Merlot and 2 % Cab Franc

Appearance: Light straw with light greenish tinges.

Nose: Reminiscent of tropical fruits &
asparagus. Grassy & herbaceous on the nose.

Palate: Excellent depth of flavour with an abundance of fruit and a clean crisp finish.

The fun of being in the wine industry is that occasionally poetic license makes people smile. When we trialed our sparkling 2 years ago a team of friends (sparkling experts) helped us in the decision making about quality. Jill Lennon was outspoken about the quality of the wine so we named it Jillian's ??

Jillian's Sparkling is a limited release clean Sparkling wine made from predominantly Semillon and Chardonnay . It is clean and crisp ideal for any social occasion. Its availability is very seasonal and can only be purchased at The Cellar Bonnet Bay.
